Angel Food Cake

Angel food cake has whipped egg white as the main ingredient which makes it very light, soft, white and fluffy like the “food of angels”.  You can eat it with jam, ice cream, whipped cream and fruit. Thanks to the jam I made from the blueberries I picked last week, I have to make one to enjoy it with the jam. Here you are, the recipe to make an angel food cake.

Ingredients

230 gr egg white (from abt 6 eggs)

1.5 tsp vanilla

1 tsp almond extract

1 tsp cream of tartar

1.5 gr salt

100 gr caster-sugar

65 gr confectioner’s sugar

70 gr cake flour (substitute: 58 gr all purpose flour+12 gr cornstarch)

Method

– Beat the egg white with caster-sugar and cream of tartar.

– Mix the cake flour and confectioner’s sugar and then sift.

– Preheat the oven at 180o C

– Use a rubber spatula to fold the flour into the egg white cream

– Add in vanilla and almond extract. Continue to mix well with the “fold” method.

– Pour the mixture into the chiffon baking form. Spread it evenly.

– Bake the cake until it turns into light brown (abt 1 hour). If you use a toothpick and tuck into the centre of the cake and see that it is dry. The cake is done.

Let it cool and serve with the home-made blueberry jam like I do or the types of jam, cream and fruit you like.
