When I was a kid, I really disliked flan. The reason is once I ate it, I could not stand the strong smell of egg in the cream. Of course, it was due to the cook’s wrong method, not the dish itself. But like all other kids, I was very sensitive to bad food. I never tried it again until later when I learnt cooking and found that people around loved to eat and make it. I tried it again and this time I loved it. Since then this has been one of my favorite desserts and side-dishes. It’s easy to make but the taste is always so good. You can also easily remove to smell of egg by adding vanilla extract and boiling the milk before you pour it into the egg mixture. If you like coffee, add in some coffee, it will make the flavor even better. In addition to coffee, you can also create different versions of flan such as coconut caramel pudding, matcha milk pudding, pandan caramel pudding etc… All taste very delicious!

Ingredients
Pudding:
2 egg yolks
1 whole egg,
200 ml milk
55gr sugar
2 tsp vanilla sugar or 3 drops of vanilla extract
20-30 gr black coffee
Caramel sauce:
70 gr sugar
30ml water
Method
Making caramel sauce:
– Mix sugar, water and lemon juice.
– Cook the mixture over medium heat.
– Stir well while cooking to avoid burning.
– When it turns into light brown. Turn off the heat and quickly pour into the pudding forms/cups.
You should tilt the cup/form to make the caramel also cover the whole cup’s inner surface so that it will make it easier to separate the pudding later.
Making the pudding:
– Beat eggs with vanilla. You just need the eggs evenly mixed.
– Mix sugar and milk. Whisk the sugar while simmering the milk mixture until the sugar dissolved and the milk start to simmer.
– Turn off the heat. Pour the milk mixture into the egg mixture. Remember to whisk the egg continuously while you pour in the milk so it can go evenly without making the egg cooked. As I said above, the boiled milk can also help to remove the smell of egg.
– Filter the mixture with a sieve to remove the sediments.
– Add coffee or the taste you like such as matcha or pandan…
– Pour the mixture into the caramel ramekins.
– Preheat the oven at 150 Celsius degree.
– Bake using the water bath method* for about 40 minutes or until it is cooked.
You can check if the pudding is done by inserting a small knife or toothpick into the centre. If it comes out clean, then it is done.
– Take the ramekins out and let it cool. You can keep it in the fridge and serve when it is cold or even can eat it warm in winter.
* Note:
– If you have some caramel left, you can use the caramel to draw some shapes to decorate the flan 🙂
– Water bathe method: Put all the ramekins into a baking tray. Pour water into the baking tray as long as it reaches 1/4 the height of the ramekins.
