Tangsuyuk originally comes from China but nowadays Korean people have made it become part of their daily culinary routine. To make this dish you can either use beef or pork shoulder as the main ingredient. Here below is the recipe to make it in the Korean style. I use pork shoulder for this time.
Ingredients
200 gr pork (can be replaced with beef)
½ yellow paprika
½ red paprika
½ green paprika
½ carrot
1/3 onion
50 gr tapioca starch/ corn starch
8 gr flour
160 ml water
35gr sugar
20 ml soya sauce
25 ml lemon juice
1 egg
A garlic clove
Salt, pepper
Cooking oil
You can replace the veggie with the ones you like, for example: pineapple, cucumber, apple etc.
Method
– Season the pork with salt, pepper and chopped garlic. Let it rest for 30 minutes.
– Peel the tomato and chop into fine pieces.
– Cut all the vegetable into square or rectangle shapes as you like.
– Beat the egg and add in the pork. Mix well. Continue to add 30 gr corn or tapioca starch and flour and mix them all well until the pork is covered with a slight layer.
– Add oil into a deep frying pan. When the oil simmers, add in the meat and fry over high heat until the meat looks crunchy. Take the meat out and drain in a sieve. Put the meat back to the frying pan which is heating again. Fry until the pork becomes slightly golden. The purpose of cooking the meat again is to make the nice colour outside but not overcooked inside.
Making the sauce
– Mix 20 gr corn starch/tapioca starch with 30 ml water. Leave it aside.
– Add water, sugar, soy sauce, lemon juice and chopped tomato into a pan. Cook over medium heat until simmering.
– Add in the vegetable and stir well until it is medium cooked. You can taste the paprika to check. Don’t overcook, otherwise the veggie will become too soft and the colour looks dark.
– Add the cornstarch and water mixture into the veggie and stir well until the sauce becomes thick.
– Add in the fried meat and stir until they are mixed well, then arrange it into a plate to serve. Or simply arrange the meat and veggie into a plate and pour the sauce over. This dish is normally served with rice.
